人間と雑草の歴史を扱った『Lives of Weeds（雑草の生命）』という本によれば、米国人は、芝生の景観を損ねるという理由だけで、タンポポを駆除するための強力な除草剤を開発したそうだ。どうしてそんなことをするのだろうか。タンポポを見たくないなら、食べてしまえばいいのに。韓国では、柔らかいタンポポの葉っぱを摘んで、味噌和えやキムチ、漬物などにする。白いタンポポは体に良いとされ、薬やお茶にするらしい。タンポポみたいに、人によっては雑草でしかない、小さくて取るに足りない植物。そんな植物のことを、韓国人は「ナムル」と呼ぶ。 韓国では、ナムルは季節の変化を知らせるシグナルだ。市場にナズナが出てくると、冬の終わりが近づいてきたと感じ、タラの芽が並び始めると、もうすっかり春になったのだと実感する。暑くなってきたら、カボチャの葉っぱを蒸して、ご飯やおかずを包んで食べる。ナムルは旬が短いので、急かされるような気分になることだってある。かぐわしい菜の花が食べられるのは、2月から4月までの間。一度でも多く食べるには、急がなければならない。なら、冬には何を食べればよいのだろうか。旬のナムルを茹でたり煮たりしてから干した、「ムクナムル（古くなったナムル）」というものがある。新鮮な味はないけれど、もっと香りが濃くて、歯ごたえもよくなる。 ナムルは食べ方も色々だ。普通はさっと茹でて、味噌やごま油で和える。そのままでもおかずとしておいしいが、何種類かをご飯にのせて、コチュジャンを入れて混ぜると、海外でも人気だというビビンパになる。また、味噌汁の具としても優秀だ。味噌汁にナズナやヒメニラ、ヨモギを入れると、それだけで味や香りがすっかり変わり、新しい料理に生まれ変わる。オタカラコウやカボチャの葉っぱはそのまま茹で、サムジャ …
